Golden Citrus Carrot Salad

Salad:

2 organic oranges, peeled
1 tablespoon orange peel
3 cups Our World Organics Carrots, shredded
½ cup golden raisins

Dressing:

2 tablespoons oil
2 tablespoons honey
2 tablespoons lemon juice
¼ teaspoon salt

Directions:

1. Slice each peeled orange; cut each slice into quarters. Place carrots, orange peel, sliced oranges, and raisins in medium salad bowl.

2. Whisk together all dressing ingredients. Add to carrot mixture. Toss until well mixed.

Serve immediately or refrigerate.

Yield: 6 servings

Each serving provides 1 cup of vegetables.
