Skillet Garden Frittata
4 organic eggs 2 tablespoons water ¼ teaspoon dry mustard ½ cup shredded Our World Organics Carrots ¼ cup chopped organic sun-dried tomatoes, if desired 1 tablespoon butter or margarine 1 cup Our World Organics Broccoli Florets ½ cup shredded Swiss or Cheddar cheese

Directions:
1. In medium bowl, whisk together eggs, water, dry mustard, carrots, and tomatoes. Set aside.
2. Melt butter in large skillet. Sauté broccoli in butter for 3 to 5 minutes or until broccoli is tender. Add egg mixture to broccoli in skillet. Cover; cook over medium heat for 4 to 6 minutes or until eggs are set. Do not scramble.
3. Sprinkle cheese evenly over eggs. Cover and continue cooking for 1 to 2 minutes or until cheese is melted. Serve immediately.
