Chicken Tortilla Soup
Soup:
1 tablespoon oil ½ cup Our World Organics Carrots, shredded ¼ cup diced Our World Organics Yellow Onions 14.5-oz. can organic chopped tomatoes 1-oz. pkg. fajita seasoning mix 4 cups chicken broth 4-oz. can organic chopped green chiles 2 cups cooked, diced organic chicken breast 1 cup frozen organic corn 1 cup Our World Organics Russet Potatoes, peeled and diced 2 corn tortillas, torn into 2-inch pieces
Garnish:
Fresh organic cilantro, chopped Queso Fresco or Monterey Jack cheese Sour cream

Directions:
1. Sauté carrots and onions in oil for 2 to 3 minutes or until tender.
2. Stir in tomatoes, fajita seasoning mix, chicken broth, and green chiles. Heat until mixture comes to a boil. Stir in chicken, corn, potatoes, and tortillas. Reduce heat and simmer for 5 to 10 minutes or until potatoes are tender.
3. Garnish with fresh cilantro, cheese, and sour cream. Refrigerate any leftovers.
Yield:
4 (2-cup) servings
