Oatmeal Carrot Snack Bars
½ cup butter or margarine, melted ¾ cup brown sugar ½ cup honey 2 teaspoons vanilla 1 egg 2 cups Our World Organics Carrots, shredded 1 cup flour ½ teaspoon salt ½ teaspoon cinnamon 2 cups old fashioned oats 1 cup dried organic cranberries or golden raisins ½ cup chopped walnuts

Directions:
1. Heat oven to 350° F. Line 15 x 10-inch baking pan with foil; spray with non-stick cooking spray.
2. In large bowl, combine butter and brown sugar. Stir in honey, vanilla, egg, and carrots. Combine flour, salt, and cinnamon. Stir into carrot mixture. Stir in oatmeal, cranberries, and walnuts until well blended.
3. Carefully spread mixture evenly in prepared pan making sure bottom of pan is completely covered with batter. Bake at 350° F for 25 to 30 minutes or until evenly browned and set. Allow to cool before cutting into bars.
Yield:
12 servings
