Carrots are members of the parsley family and were first grown in the mid-1600s in the New England states. Carrots are an excellent source of vitamin A, potassium, and carotene, which your body converts to vitamin A.
When choosing carrots, look for smooth, well-colored (deep yellow or deep orange), and firm carrots. Avoid carrots that are wilted, cracked, or have large green areas at the top. Keep in mind that smaller carrots are usually more tender than large ones.
Carrots can be stored up to two weeks in the refrigerator in a sealed plastic bag or container. It is best to remove the leafy, green tops before storing to prevent carrots from shriveling, but wilted carrots can be easily recrisped in cold water.
